In Japan, beef has to meet certain standards in order to be classified in one of 5 premium quality ranks.
Premium beef raised in Oita is Bungo beef. Our beef is classified in the 2nd highest rank called “Itadaki.”
This is a rare and very delicious beef with extremely good repetition among connoisseurs.
The cow must have spent 36 months in Oita and pass special inspections of background and day to day care.

Shochu

Shochu is a distilled Japanese liquor made from grains and vegetables. A process similar to Sake brewing produces a mash or first Moromi. The grain or vegetables are then added, forming the secondary Moromi and the fermentation continues for another 8 to 10 days. The resulting brew is then distilled to fortify it.

The first three Shochu’s we offer are know as the 3 Ms.They are very exclusive and considered the finest of the premium Shochu’s.

Sake

Although Sake is often referred to as Rice Wine, it is actually brewed like beer.
It is central to Japanese culture and used in religious ceremonies.

Sake’s essential elements are water, rice, technical skill, yeast, and weather. In order to change the flavours and improve Sake, breweries carefully mill or polish the rice grains taking away a percentage of the outer surface and leaving the essential starch in the kernel. In order to convert the starch in sugar a naturally occurring rice mould is cultivated called Koji. Sake brewing is unique as the Koji acts on the starch turning it into sugar which is acted upon by the yeast simultaneously producing alcohol. This is known as parallel fermentation.
